Mohinga, often considered synonymous with Burmese snacks, is said to have numerous regional variations. While most variations use a fish broth, in some towns of Upper Burma, it is cooked with a broth of chicken and fish. This is why the version is called “kyet-tha (chicken-meat) mohinga” or “kyet (chicken) mohinga”.
The photo shows the “kyet-tha mohinga” we ordered at a snack stall in the town of Kyaukpadaung, on the way to the Buddhist archaeological site of Bagan. The generous amount of coriander topping may be a local feature. You can also see chickpea crackers – another specialty of Kyaukpadaung – behind the condiments. (SAWADA, Hideo)
