As the name of the “natto triangle” suggests, natto (fermented soybean) is not exclusive to Japan but is also found in parts of Southeast Asia. The variety of natto in Myanmar is rich, ranging from those fried in oil to those dried into a cracker-like form. Especially in the Kachin region of northern Myanmar, natto is often consumed in its unprocessed, grainy state that exhibits a sticky, slimy texture, reminiscent of Japanese natto. This Kachin natto is usually enjoyed mixed with ingredients like tomatoes, ginger, chili peppers, coriander leaves, or mint. In the markets, it is presented for sale wrapped in green leaves.
