Staff meal of aji de gallina, a typical Peruvian dish

When we ask Peruvians, “What is the most typical Peruvian dish?” one of the dishes that is often named by Peruvians is “aji de gallina”. The recipe is simple. Mince purple onion and garlic, sauté them well in a frying pan, and add paste of yellow chili pepper (aji amarillo). Put boiled and shredded chicken, its soup and unsweetened condensed milk in the pan, then add crackers or bread broken into small pieces to make the soup thicker. Pour it over rice and eat it with boiled eggs and boiled potatoes. Disfrute!
